Which would you recommend for building a bigger booty? I know hip thrusts have a greater range of motion, but does that mean it is better for the butt?
Would it be overkill to do both (on the same day)?

Doesn't really matter which one you do. The thing that makes either glute bridges or hip thrusts great for the glutes is the hyperextension of the hip (not the lower back) at the top of the movement. Hip thrusts are probably easier to load up, because at the top your torso is more or less parallel to the ground, rather than sloping back (as per the glute bridge) which, when coupled with gravity and a heavy barbell, can become problematic.

If you want to know what works the best, you really need to research Bret Contreras work on glute training. http://bretcontreras.com/ I don't think that anyone here can come close to giving you the depth of info you will get from Bret's research.
