Don't do what I did... if you cook with it, pour it from the pan into an old coffee can while it's still liquid like you would bacon grease. I was dumping mine down the drain forgetting that it would turn solid again before it hit the sewer, and at about 11pm one night, the water draining out of my washing machine hit a blockage of hard coconut oil and backed up a toilet that was on the same drainage line... not a pretty sight, and not a small bill from the 24-hour rooter guy.

Thought I'd add some March pics here as well taken this past weekend by a friend. Still amazed at how beautiful the water is here and there are still other islands here that this water can't compare to. It seems the further you go south within the Bahamas, the prettier the water gets. Time changes this Sunday which means longer afternoons and the water should be warming up soon so I'm looking forward to going out in the boat. I saw we all pitch together and buy our own island.

It is pretty much warm year around. We had the coldest day two days ago this whole winter which was 60F. A friend said his phone said it was 58F early that morning, but that's usually about as cold as it gets. Today climbed back up into the 70's already. The Nothern Bahamas' weather is very similar to South Florida's weather. I use to live in Grand Bahama and a flight from there to Florida was only 18 minutes by jet so they are pretty close.
