My trainer has put me on a low carb diet for 2 weeks. His logic is that I'll lose the fat layer and get a more toned look. I weigh 100 pounds. Daily intake carbs - 100g, proteins 75-80g, fat 30g. I lift 3 times a week. I'm getting married in 2 weeks therefore the diet change. I used to take 165g of carbs. Does a low carb diet make sense?

That's only ~1000 calories. That's crazy. You need to eat your BMR at least. If you do go low carb (not low calorie), you will lose glycogen weight from your muscles which can help to make you look a bit more cut (you are not going to lose proper weight in 2 weeks). However, you might turn into a crazy woman in the process unless you carefully manage your macros and you will gain your glycogen back as soon as you eat normal food again which might make you depressed because you add a couple of kg. To be honest, it's probably preferable to eat healthy food, eat the amount that you would normally eat, and enjoy your wedding day!

There will be no chiseled look as you weigh only 100 pounds. Eat a bit more protein to up your calories. Just know the moment that you eat your high sodium wedding dinner and high carb wedding cake that you will bloat and retain water the next day.

Your glycogen stores will refill rapidly and water retention will also increase.
I personally wouldn't cycle off carbohydrates and then load the day before a wedding. If you have had experience with that kind of dieting protocol and understood how your body responded then sure, but it's a hell of a gamble to take with your big day just to drop a few pounds of glycogen and water.

So my sample day diet - 2%milk and cereal, 6inch veggie sub, milk and soy protein shake, whey protein shake, few nuts, yogurt and veggies. That makes 100 carbs, 80 proteins and 30 fats.
My abs look more toned after going low carb just for a week. i am lifting heavy since 2 years. I have lot strength and endurance and not much bulk. I wanted my arms and back to show some muscles. What's the best way to do that in 2 weeks?

You won't lose a significant amount of fat in two weeks.
A low carbohydrate diet is logical to reduce glygocen and associated water retention (100g is likely low enough to achieve this). Just be conscious if your glycogen stores are depleted, they will be replenished when you increase your carbohydrate intake. If you plan to significantly increase your carbohydrate intake the day before your wedding and haven't experimented with that kind of dieting protocol before, you may be unhappy with the result, so be very moderate about it.

This is becoming a bit circular.
You won't gain fat based on a single day's refeed. If your glycogen stores are depleted and you replenish them with a high carbohydrate intake, you will notice the effects over the same/next day.
It 'works' when you want to deplete glycogen stores to lose water weight and refill them on a specific today to increase muscle 'fullness'. As with anything, it only 'works' if you are able to manage it well.
If you're on a low carbohydrate diet for an extended period of time you will lose weight, but it won't be specifically because you're on a low carbohydrate diet. There's no long term benefit to reducing your carbohydrate intake significantly, although it's the easiest macronutrient to reduce to promote weightloss through a caloric deficit.
