ON chest day i usually do DB bench. i find that when i use bb my left shoulder feels wrong afterwards. on a bb i can do 145 lbs 5 times. with dbs i can do 55 lbs in each hand 8 times.
chest day
Flat DB press 3 x 6-8
incline db 3 x 6-8
(when it is in there) decline db 3 x 6-8
flat db flyes 3 x 8
incline db flyes 3 x 8
incline cable flyes 2 x 8
incline cable flies to failure
is it ok to use dumbells to completely replace barbell? or, maybe when i can do 70 lb dumbbells i might start doing bb. not really sure
opinions?

Seems like your volume for hitting your chest is too high, but that's up to how your body reacts personally. But there's nothing wrong with replacing BB exercises with DB exercises. You won't hit the accessory muscles required for BB Bench Press as much, but it'll work your chest fine (if not better). If your shoulder is hurting after BB though you should check your form, it's probably off which would put extra pressure on the shoulders.

you really arent using enough frequency for your training and/or too much volume in one day.

Whoever told you that merged the "high protein is bad for your kidneys" and the "training more than once a week is bad" myths together. Both of which are untrue.

If your shoulders hurting during BB try bringing your chest up and slighty arching your back so your chest comes above your shoulders (if possible for your physique), eliminating the majority of their part in the exercise. Feels awkward at first but trying to bring your shoulders blades together to when doing the above helps further eliminate the shoulders part in the exercise.

i dont track my calories or anything. breakfast is usually sausage, scrambled eggs, homefries, and (i know) a pancake. lunch is protein bar and a turkey sandwich. supper is usually steak, grilled chicken or fish, with corn broccoli or carrots. i do eat a snack in between though. sometimes chips...brownies...damn i like food too much lol
