I know that doing 3 sets of 8 -10 reps for strength training exercises will give you definition and build muscle. What combination of sets and reps should I do if my muscles are big enough and I want to get more definition rather then bulk? I know that my diet and cardio exercise will also help with this.

Don't see the weight training as something you should change for muscle definition. Keep the same kind of routine that got you there, but change your nutrition and cardio habits.
