I usually marinate with 1 part soy sauce, 1 part pineapple juice, 1 part water... sometimes add garlic or herbs. I grill on the hot side normally, until I get some char, that's the point of grilling to me If I manage the heat right the meat will be done the way I want it done.
My dressings are all spur of the moment. For this I probably just grabbed some mustard, vinegar, olive oil, salt and mixed in some tarragon and hot sauce (or whatever else I felt like)... sometimes I get a little more adventurous, sometimes a little less depending on my mood.Don't fear your food. After I implemented Kenji's technique on dissecting a bird prior to cooking it, cooking a turkey a whole just seems so, so wrong.
The best part is that he puts the two turkey breasts together and uses the turkey skin to keep it together. Genius:

How often are you guys that are eating out and having pizza from restaurants going off your macros.......or are you free balling them most of the time ? I am struggling to eat out places on like 350c 200p 80f !!

an attempt at parmesan foccacia. not much to look at, but it tastes good
strips of chicken, coated in flour, and pan-fried in butter covered in honey mustard sauce with a random side of onions so i didn't waste any butter left in the pan
