    I usually marinate with 1 part soy sauce, 1 part pineapple juice, 1 part water... sometimes add garlic or herbs. I grill on the hot side normally, until I get some char, that's the point of grilling to me If I manage the heat right the meat will be done the way I want it done.

    My dressings are all spur of the moment. For this I probably just grabbed some mustard, vinegar, olive oil, salt and mixed in some tarragon and hot sauce (or whatever else I felt like)... sometimes I get a little more adventurous, sometimes a little less depending on my mood.

    Tarragon, nice, don't use that much, should add it to the herb collection.
