currently, i've mastered a perfect dish of mixing:
Chicken breast (cut up into bite sized pieces)
Brown Rice
Olive Oil
Hot Sauce
^tastes pretty good as is. But I also want to kill 2 birds with 1 stone, but adding veg's to this mixture too. I originally eat broccoli, but I don't want to mix broccoli in there, since it will probably get all smushy.
So I was thinking about Carrots, Peas, Cauliflower, any other recommendations?

zucchini, squash, broccoli, carrots (matchstick cut), onions, bean sprouts, water chestnuts, green onion, mushrooms, bell pepper, peas, etc.
Cook your rice then crisp it up in a pan, set aside. Sweat out veggies until tender but not mushy. Combine rice, veggies and cooked chicken in large wok along with a little soy or whatever sauce you enjoy.*SCC*

Ditch your meal plan and develop a diet that combines sound nutrition with the foods you enjoy by eating when you see fit in the portions that allow you to achieve your macronutrient and caloric needs while providing sufficient micronutrients, energy and satiety. One can never forget that nutrition is a tool, not a restraint; the enjoyment of life should always come first. Psychological, sociological and emotional health should never be threatened by the attempt to increase physiological health.
