    Protein Cupcakes w/Icing

    Homemade protein cupcakes with peanut butter mint cream cheese icing.








    Ingredients

    Cupcakes

    - 1 cup of soy bean flour
    - 8oz unsweetened almond milk
    - 3 eggs
    - 4 tbsp unsalted butter
    - 1/2 cup unsweetened cocoa powder
    - 1/4 cup Stevia
    - 1 tsp vanilla extract

    Mix all items together in food processor until well blended, and pour batter into cupcake molds.


    Icing

    - 8oz fat free cream cheese
    - 1 egg
    - 1 tsp mint extract
    - 1 scoop peanut butter protein powder

    Mix all items together in food processor until well blended, and pour on top of cupcake batter.


    Bake @ 325 for 15-20 minutes, depending on how gooey you want the cupcakes' insides to be.




    Taste verdict? Amazing.


    Stats? You want stats??


    1 serving/cupcake (recipe made 8 x 95g cupcakes)

    - 177 calories
    - 5 gm fat
    - 5 net carbs
    - 17 gm protein
    - 4 grams of dietary fiber

    Well I bought the mint extract at Kroger, so it stands to reason that Target might also have it.
