How do MMA belts work?
lets say you take a mma class that combines bjj and muay thai. how do you go up in belt levels? is it better to train bjj and muaythai seperately or take mma class if ultimately the goal is to do mma?

No class is going to combine the two. They will be separate classes with separate advancement. An actual MMA class is invite-only, and is almost all sparring and drilling for people who are well-versed or at least competent in the various elements of MMA.
FYI: I'm only speaking for reputable and serious gyms. I'm sure you can find some rinky-dink hack gym that has guys doing twisters in the corner while the coach shows off his awesome flying knee.

Greg Jackson's camp in New Mexico has a belt system for MMA check out their brochure:

It looks like there are four types of belts in his program.
