    Boris is great, but iirc, I found Doris better.... Or was it that I found Boris to be better? Goddamnit. But Hoppin Frog in general makes some really good beers and they're only like 40ish mins away from my hometown in Youngstown, Ohio... They need to clean up their IPAs for them to really transcend IMO.

    Anyway, all this talk makes me want a beer. Now. Which reminds me, had Oak Aged Yeti Last night. Pretty good... reminds me of a less polished Abyss. Similar to the Stone RIS or whatever.

    I'll try the Bengali next. Resin had all the things I liked about a DIPA, but I wish it had more balanced hops.

    cracked open my Belgium Dubbel attempt only been aging a month, yes green bottles blow I know

    not bad flavor is better than I though. Final reading when I bottled was 7.5% abv flavor is almost there

    Is there is a down side to too long in primary? For a wheat beer.

    Is DME the only way to get a starter yeast going?

    Secondary doesn't even need to exist. Stuff I dont dry hop or put on coffee/fruit/cocoa nibs is going to just basically stay in primary for 3 weeks and then bottle it. As far as too long in primary it would have to be in there for well over a month, so when you need to batch condition big beers that is the way to go.

    DME is certainly the best way to get a yeast starter, because you are putting the yeast in a real wort. You need to have it trained to fermenting the complex sugar profile in beer, if you use sugar for a starter it will only be attuned to fermenting simple sugars. If you can't get DME, apparently Malta Goya soda is ok to use as your starter; because it is a beer wort soda essentially.

    Well it will work out then. Kit gets here tomorrow. I can get it all going, then ill be out of town 28th-jan 5th or so. then when i get home it will have another week. any prep i should do for having it sit unwatched for a while? other than a catch pan and temp control stuff.

    I should send you a few bottles at the end of this first brew =P

    If you are brewing this week, then it will have a week of fermentation which is the main fermenting period. The rest of that time is just so the yeast can clean up off flavors, and you would have little to worry about other than temperature control. If it doesn't blow off in the first 2 days then you are good to go.

    I wouldn't mind trying it, so we will have to set up a trade later.

    I grabbed some sam adams whitewater IPA out of a lack of anything else. It isnt terrible actually. There is yeast in the bottle too =O or so i hope its yeast oh and saving the empties for sure
