say you eat oatmeal in the morning and then workout an hour later, will the slower digested oatmeal somehow "block" how fastly your post workout shake is absorbed?

Your body will digest food based on it's density and overall ability to break down. It is unbiased so not it won't. If a small portion of the shake has saturated itself within the oatmeal prior to the prime digestion period, then maybe; though it really shouldn't happen if you cooked your oatmeal the right way.

From your question, it seems like you believe lots of nonsense about nutrition, probably because you listened to sources associated with the supplement industry. Please understand that those sources are not interested in helping you. Rather, they're trying to make money by taking advantage of you.
