Of course most people never reach their maximum potential, so a guy who benches 200 in his 20's could easily bench over 300 in his 30's, which is only an apparent gain in strength because he could never get back up to his true maximum potential. The same or similar studies also suggest similar functions in stamina and brain profusion (activity). This would suggest that during his peak physical years he either (1) held back and fought to stay small to fight LHW (2) doesn't conform to basic laws of physiology or (3) is on something.
Once again, my above paragraph doesn't "prove" anything. I've personally put on 10 lbs of muscle (admittedly weak) over about a 6 month period and dropped body fat by about 8% over the same time. With all that being said, I'll sit back and let the Nevada State Athletic Commission figure out if he's legal to fight or not. Also, time to start chugging white wine instead of protien shakes 
overall athleticism peaks around that age (as seen by tennis players and whatnot), but powerlifters generally peak around 30. of course they're all using so who knows.
most big guys are the gym are older than 26 as well. that could just be because they have been training longer (despite their maximum potential passing them by as you said). But yeah overeem had a hard time making MW in pride, so I doubt he went on any bulks in that time.

Brock was too high on himself and underestimated every single one of his opponents. Every pre-fight interview "I'm a different kind of beast." Made it that much more satisfying when Cain made a fool of him.
