From now on.....I'm brining when time permits.
I brined these chicken breasts for 18 hrs and let them drain. Coated them with EVOO and a local rub that is crazygood on chicken.
Cooked them directly over coals and the results were about the best chicken I've ever had. Juicy meat and crispy skin.
Damn cellphone camera on my SGS3 ain't too shabby.
