jerky and other dehydrated foods
just got a dehydrator and have been making jerky with the stock spices but i'm looking for some recipes I can mix up myself. If you have em I want em. This thing is awesome btw if you don't have one. Best jerky I have ever hard bar none, nothing else is even close and I have tried a lot.
also have been thinking of making some banana chips, apple chips, etc... How long can those keep for? my dehydrator has 6 trays and I can make about 3 lbs of sliced jerky at a time. Was thinking about loading it up with fruit and sealing it up in mylar with an oxygen eater then throwing it in the car and taking a few into work etc... Do I need to prep that prior to dehydrating?

Approximately how long does it take to dehydrate product? My bro bought some special trays and would just use the oven with the door propped open slightly, and agreed home made jerky is fkin 10x better than from store.

I've only done skillet steak so far but 5-6 hours depending on how you want it. Over 6 hours at 160 degree it will start to get a little brittle.

Best jerky recipe is salt, pepper, and meat but it's gotta be dried out over smoke. Not sure on the dehydrator I tried jerky in there but too way too long and never was done properly so I just hang them from the rack in the stove now and put it on the lowest setting and leave the door open. I tried banana chips in the dehydrator and left them overnight and they were still gooey and stuck to the racks, nothing like the commercial stuff you buy (the commercial stuff is coated with something too).
EDIT: WTF ^^ brown sugar, pineapple juice, teriyaki??? Jerky is not supposed to be sweet.

5-6 hours. Good lordy. I dont know if dehydrators are exceptionally energy efficient but an oven does it quicker from what I remember.
Might make some this weekend. Ill ask my bro how he made his cause it was fkin joocy

IME oven is WAY faster, just be careful that you're not cooking it, obviously you don't want it cooked you want it dry.

I just test a piece evey so often in my dehydrator. It actually toughens up and drys a little more after its removed.
I usually cut it and soak it in a worchester/liquid smoke mix over night. Then Ill add seasoning right before I put it on. Im not gonna go spouting out recipes as everyone likes their jerky different.

it doesn't make sense to me that an oven would dry it faster, you are still going to be putting the device to the same temperature.

thats what got me onto this idea. 6 bucks for 3 oz or bulk 1lb stuff from a costco/sams that is of questionable quality == 
This will pay for itself by the 3rd time I use it.
Duration of cooking also seems to depend on how thick the meat is but meh.
Anyone with a dehydartor do turkey jerky? I read that you needed to go to 170 for poultry but I also read people saying that it was fine at 160 which is top end of what I have.

Yeah and you would think the dehydrator would have better air flow and work more efficiently too. Try a batch each way and see, the oven was like half the time and dried more evenly whereas I still had moist spots in the dehydrator hours later. Maybe I just have a crappy dehydrator...

When I tryed the oven compared to dehydrator it seemed like it was too done on the outside and moist in the middle. Im sure my heat settings werent great but I just like to throw it in the dehydrator and go.

well its a little late in the season for me to go scoop up a dead deer off the side of the highway now!
no rofl hunting in NJ + i dont have a hunting permit nor a vehicle to transport the deer =/
i figure i could gut it etc but much more than that id be going in blind+w how much butchers cost from wut ive heard...no me gusta

If your just making burger then hell there aint nothing to learn. Simple as cutting out meat and launching it in a grinder, you dont have to know what cut is what it dont matter if you grind it all up.
or just go buy the cheapest burger you can find and dehydrate that ****.

I own a dehydrator and been putting everything in it trying to experiment. Besides beef jerky, u can dehydrate fruits, vegetables, any food really.
Try making sweet potato chips with it. They're fkin awesome

Try a batch of jerkey marinated with worchestershire sauce, liquid smoke and A1 sauce. That's the first thing I'm gonna try when i get a dehydrator.
