    Also tilapia doesn't have a strong natural flavor so spices are a must.

    Helps keeps the fillets moist and makes things easier to clean. Or I'm afraid The Man will know that I'm cooking fish and come to get me in black helicopters. But mostly the moist and ease of cleaning.
