Here's a recipe I converted keto-style. The original title said it's a "bleu cheese bread", but when i tried it a few months ago, it gave more a soft flat cake.
I converted it to keto style by taking out or replacing flour, milk, etc. I split it into several cookie-size "cakes" and it was excellent. For people who like bleu cheese, of course.
So here it is :
50g whey powder (i used the vanilla-almond flavor from sisu)
70g bleu cheese (i used danish bleu)
30g walnuts
75ml cream (i used 10%)
5-10ml olive oil
5-10g parmesan cheese
Preparation is very simple : you cut the cheese and the walnuts into small pieces. Mix the whey, the bleu cheese and 3/4 of the nuts in a bowl. Then make a hole and pour in the oil and the cream. Mix it until smooth.
Then you just split that into 5 cookies and put them on a buttered plate. you add the remaining walnuts and the parmesan as a topping.
and you bake at 350F for 30-40 minutes.
each cookie has 154 calories, 2.7 grams of carbs, 11.3 grams of protein and 10.9g of fat. That gives 7%-29%-64%, which is almost keto-perfect ! (Nearly half the carbs are from the whey, so if yours as less, you might get under 5%. The rest of the carbs are from the cream and nuts.)
