Can you be more specific on the amount of food consumed ? also ... how much weight do you expect to gain in 2 weeks ?

You're not eating enough and you don't understand basic nutrition.

Find out how many calories you need in a day. Add 500. That's how many cals you need every day.

    Bodyweight x1-2=protein
    Bodyweight/2=fat
    Rest of calories from carbs.

Your diet sucks. You haven't even got one, so to speak, because all you did is post names of the foods you eat which means NOTHING.

    1) So everyone that's "skinny" has a high metabolism? hmmm..
    2) add up the calories in your diet. The foods that you eat on a day to day basis are meaningless without numbers.

This. The most important thing is knowing your stuff. Do your research, compare notes, make a plan.

You know how to speed up your metabolism? You're fat. You have a slow metabolism. You lose fat and some muscle. Boom! You're skinny and now have a fast metabolism!
