    OP here, thanks for the help everyone but I think Im rollin with soja on this one, the low possibilty of a very small change to trans doesnt concern me, besides, the temp I use is fairly low, more like fast cook as apposed to deep fried

    Heat at medium heat
    You'll be fine.
    As long as you aren't cooking the olive oil in a deep fryer or at high heats you're good to go.

    you know to mimic fried food you can bake with egg white for the crispyness, then for the fat add what ever liquid oil on top post cooking.... Is it that hard to use healthy alternatives?
