    How long will hard boiled eggs stay fresh

    How long should eggs stay fresh in the fridge, if i just hard boiled a batch of about 3 dozen

    one thing that bugs me is sometimes the shell will be extremely hard to seperate from the egg without the membrane staying attached and losing some or alot of the egg in the process of shell removal.

    i have noticed that shell removal is easier when eggs are cooked longer , but then you wreck more of the pro teen.

    It has to do with the pH changing as the egg ages... the fresher the egg, the more it sticks.
