Is it fair to say you hold arch your back when performing all back and chest exercises?
Or does this mainly only apply to bench press?

depends on the exercise, and your bodies unique physiology . I like to keep a good arch while i bench since it directs the pressure away from my shoulders and inot my pecs, helps me get a better range of motion and pump. I also arch while doing pullups, it helps me flex my lats harder. I dont arch in OH press unless i need to cheat a bit, which is usually on my heavy sets. Alter your exercise form to suit your needs.

Arching my lower back during back exercises like barbell rows and lat pulldowns allow me to feel better contraction and arching during pushing movements like flat db bench lets me feel my chest working more + for some reason I think it can help lift more weight. Look at powerlifters when they bench, they usually always have a arch in the back.

arched or flat is fine.
I prefer arched for pressing movements, and flat for pulling, just personal preferenceStaple Supplements:
