Eating at a slight surplus, hitting your macro's, and lifting hard...will build muscle. Certain types of cheeses are not necessary.

Any cheese that you enjoy eating. You need to learn how much protein and dietary fat you need to consume at a minimum, to reach sufficiency. And you need to learn how to use those figures to calculate total caloric intake properly. I suggest you start by reading this.... http://forum.bodybuilding.com/showth...hp?t=121703981

Any cheeses that fit your macros. With respect to body composition individual cheese selection is largely irrelevant.

This week I'm eating port salut.

Edit: I see you're in Ireland. I'd go with whatever you can get local. Srs. I buy almost all of my cheese from local producers & it is way better than anything from the store.

The best 3 or 4 cheese to eat when bulking, cutting or maintaining would be the 3 or 4 cheese that you like the most.

    Now isn't that simple?

    1) Whatever fits your macros and
    2) Tastes good to you

    My personal, low-brow recommendations:
    -cottage cheese, 2%
-colby jack cheese (try it on your eggs)
-cheddar cheese (my favorite on tuna)
-feta cheese (F1@#ing delicious no matter what you add it to)
