Counting calories before or after cooked?

If I cook chicken breast or ground turkey, do the calories on the package pertain to before its cooked or after its cooked? Sometimes I'll cook 10oz of chicken breast, but after cooked only weighs 7oz.

It is uncooked weight generally.

Do not overthink it and just measure it before cooking. Most of the times very tiny portions of meat get stripped off and mixed with the other vegetables/oil/water you're cooking it with.

So in case you're separating the meat after cooking and then measuring it, the discrepancy is bound to be there.
