After my season ends I'm going to run a 3 month cut which will be about 3 cycles of 5/3/1 and was wondering at a 500 calorie deficit how my strength will hold up, or possibly gain?

well 5/3/1 has slow progression and doesnt force you to do X amount of reps, nor is it a high volume program unless you're doing loads of accessory work. I think it'll be fine.
