i wikied sodium nitrite and it said that it is put in food on purpose to prevent the growth of bacteria, more specifically the bacterium that causes botulism. I dont see that as a bad thing necessarily.

What about bacon nutritionally causes it to be associated with heart disease and diabetes?

I actually did read that and found it interesting, several of the faults they found with the study could actually ask more questions about the position they are trying to defend. Rather than nitpick at the science I think a better position to take would be that salt is required for several metabolic functions but like any other vitamin or mineral too much can be a bad thing.
