    Low sodium beef jerky options?

Sry if this has already been discussed, but I almost never see people talk about beef jerky.

I'm a truck driver and trying to get my diet better. I have to rely mostly on sardines and beef jerky (as well as milk or meat when I can get them fresh).

But the sodium levels are through the roof in the beef jerky and other canned foods I have to eat. A Jack Link's beef jerky stick is lean, with 26g protein, but it has 1470 mg (61%) of sodium! If I eat 2 of those, along with canned foods, I can push ~7000mg total sodium for the day! I know I can get lower sodium canned stuff, but what about beef jerky?

Does anybody know of any low sodium beef jerky options? Are bagged jerky better than sticks? What about wetter, sausage-type things?

The best thing to do is buy your own dehydrator and make your own jerky with sea salt. You can get one at amazon.com for around fifty bucks. Good investment.

I dont eat a lot of jerky but I like the fact that I can make it without nitrates and know exactly what goes into it.
    It's time for a Breakthrough.

Interesting.. what kind of meat do you use? I imagine it has to be chopped thin.. can you do turkey lunch meat? Bacon?

and how do you package it? I get home once a month, so if it'll keep that long, doing a big monthly batch might work for me.

I use ground meat cuz it's easier to chew. Can't tender an opinion on bacon or turkey lunch meat but neither is a significant source of protein. I'd just stick with beef TBH.

The dehydrator I got on amazon.com comes with a "gun" you can use to form ground meat into strips or sticks. You need to get the leanest you can find because the fat will have to be blotted off and it can make the jerky spoil faster. They say it will keep for 3-4 weeks.
