Avocado Fries!
I found these to be very yummy.
Slice skinless avocado into thin strips
Line on a piece of foil
Season to taste (I used salt, pepper, and onion powder)
Bake at 375 for 10-15 minutes
Flip
Bake for another 20-25 mins or until outside is slightly browned and somewhat crispy.

EDIT: wow those ARE pretty d amn good. any clue how many calories a whole avocado is? I could definitely eat these every day haha.

This sounds delicious but it looks very hard to slice avocados. The only thing I can do with one is use a spoon to take it out of the shell. Any suggestions?

It's easy to slice avocados. Cut the avocado in half, peel the side that comes apart without the pit. Sometimes you can just pop the pit out of the other half, if not, cut it in half again (so you have two quarters) and then you can easily get it out. Peel those pieces. And then slice everything up.
Edit: Tried them and wasn't a big fan (I love plain avocado too much, I think), but still happy to have tried. Thanks for the recipe.

Maybe your avocados are too ripe. I like mine where they just barely give when you squeeze the sides.

To get the pit out, my favorite way is take a large knife and "hit" the pit with it. So a right-hander will hold the avo in the left hand, and knife in the right hand. Then whack the pit in the middle to make the blade stick. Next, push gently and twist. The pit should pop right out!
But it is easier to peel quarters. When I want slices, I usually cut the halves into quarters. With the proper ripeness, the skin will peel off in one piece when grabbed at one tip and pulled back.

This. The pit is very soft and a decently sharp knife should go right through it without a problem. It makes an indentation, gets stuck in the knife (Just a little bit) and you pull it out.
