Barbell Step Ups or Barbell Lunges

Looking to add/change up assitance lifts and was wondering how many people do either of these and how much weight (& reps/sets) you normally do?

I do walking barbell lunges after my squats and presses. I use the curl bar since it is shorter than the Oly bar and is easier to navigate a crowded gym. 4 sets of 20 paces. I use 135 lb.
Use the tools of the trade to help you. I use devices such as chalk for grip strength, gloves, wrist straps, lifting belts - if it helps you lift more, it's all good. - Ronnie Coleman, Hardcore, 2007 Triumph Books

Biggest question in bodybuilding: Whaddaya bench? As I've said before, it doesn't matter how much you bench; it matters how much you look like you bench... There's no round on stage that's the benchpress round. - Bob Chicherillo, World Class Physique, CMG

I think the barbell step up is a very under-utilized exercise thats just as good as your traditional squat.
I do them onto a very high platform so I can't use much weight (about 40-50% of my 1RM Olympic back squat).
Strength + Speed = Power

I thnik I'm going to add these (and lunges too). Not sure how much weight I'm going to use. I might just play with it.
