    Crazy Low Calorie Chocolate Idea

    Well, I tried something the other day. And it didn't turn out quite as planned. Pretty simple but, I'm no chef so.
    I used cocoa powder, sweet n low, and skim milk, in a sauce pan. Only warmed it up, should have heated more, and then poured it into a pan. Well I put it in the freezer to hopefully speed up the hardening process but, it never really hardened. It's more of a hard fudge.

    Any ideas what I should do to actually make the chocolate harden like a chocolate bar?

    Maybe heat it more, since I only warmed it?

    I know this is crazy but, I love chocolate, and still being on my cut I need to perfect the perfect homemade low cal chocolate =D

    try adding an egg yolk.
    Egg yolk has lecithin which is added to chocolate in the form of soy lecithin, but egg yolk is also a source. and some fat which could help texture. if you add one it won't add that much calories.

    this is just theoretical...have not tried it.

    try this- take 8oz low fat cream cheese and cream it in a mixing bowl. add 1 box chocolate ff sf cookn serve jello pudding and 1 1/2c milk. transfer mixture into a saucepan and stir over medium heat until thick. pour into a dish and chill until firm. tastes just like choc cheesecake

    First off, ditch the sweet n low. aspartame is an awful thing to put in your body. The problem is that you are using cocoa powder. It is nearly impossible to mix with a liquid by hand, even with heat. Buy a 100% cacao bar which is made of super finely ground cacao (finer than the powder) and is designed for melting. Melt that in a small amount of unsweetened milk (almond, coconut or hood's cal countdown dairy milk) with some stevia for sweetening. Also you'd be better off allowing it to slowly cool in the fridge. Hope that helped.

    I've used Xanthan gum before and it works really well.

    The egg idea was also good. I made some paleo meatloaf the other day and the egg held it together much better than the previous attempt without egg.

    Maybe egg + xanthan gum for the win.

    cocoa powder is typically cocao MASS, you need cocoa butter in natural state is white, which is $$$. chocolate turns black after roasting..

    U know that chocolate is mainly fat that is solid on room temperature right? And it melts, because all fats have a certain melting point? U know that chocolate normaly only contains cocoa butter, cocoa solids, sugar and maybe milk solids? Are you trying to make a chocolate bar? Cause without the fat it's impossible! Sure u can replace all the fat with water, but than u got hot chocolate! The solidifying ingredient of chocolate is fat.
