High in protein, I think it's a great way to cut down on red meat consumption, if that's one's goal. There's so much you can do with tofu, too. It takes on the flavor of whatever you're cooking...so, I love it, if I'm in the mood for something different. The reason for the different kinds of tofu, is that some are natural...others are processed. I like the harder tofu, so I can slice it, and use it in tacos...or on salads. Has a chicken consistency, then. Somewhat. lol

Packed with iron and lower in calories...I think it's a great addition to one's diet. Just my two cents.

I shy away from soy products (and I am semi-vegan) because much of the soy out there is highly processed and there are arguments that it is not good for you. There aer also arguments that it is an allergen for some people much like lactose or gluten is.

If you do buy tofu or soy products, try to get ones that are minimally processed and organic. Other good options for high protien replacements if you do not eat meat is Tempeh which is a fermented soybean product (organic preferable), setien which is made from wheat gluten (not good if you are gluten intolerant) and Quorn which is a mycoprotein (it comes from mushrooms).

I'm not an expert by any means, but the fat in tofu is... just fat. not good or bad if it fits in your daily calorie requirements.

There's such a variety of the calorie/fat content in brands, as well as the firmnesses and flavoring because people might use it for different purposes, or might just enjoy one type more than another.

Kind of like milk; some folks prefer skim, some folks prefer 4%.
