Let's say you have 5 sets and 8 reps of lunges what does that mean?
You do 8 lunges X 5 (sets) ? So all in all you do 40 reps? Is that it?

Pretty much. A rep is a repetition, meaning 1 instance of you performing the exercise in question. For example, lowering a barbell to your chest and then pressing it back up to lockout = 1 rep of bench press. A set is a group of n repetitions done back to back. For example, if you lower a barbell to your chest and then press it back up 8 times, if you have done 1 set of 8 repetitions. If you repeat this 4 more times, you will have done 5 sets.
5 sets x 8 reps = 40 total reps yes
