Anyone know a good way to flavor up the spinach? I used salt and pepper and I like spinach anyway, but I am just looking for a new way to flavor it up some. Thanks

I am not a fan of eating cooked spinach unless it is hidden in something like lasagna.
You can always try incorporating it into a shake. I know, it sounds disgusting. Took me 2 years to finally give it a try and I was surprised. This is how I do it:
Use half a bag (yes, I know it's a lot) of baby spinach, you know this stuff:
Then add in a small banana
then add in 1 cup of vanilla almond milk (this stuff):
Add in 1 tablespoon of peanut (or almond) butter.
I personally need a bit of sweetness so I add two packets of splenda. Blend it all up (resist the urge to add any more liquid):
Final product will look disgusting:
(yes that is a very large glass)
But it is surprisingly pretty good, and a great way to get in a LOT of spinach. Granted perhaps this is a weak source of protein, but most of us are getting plenty of solid protein sources in 5 other meals to be able to get a couple fewer grams in one meal.

try this. i make it with tilapia. get a piece of tin foil. put spinach on bottom, top with asparagus and tilapia filet. mik EVOO and crushed red pepper, microwave 30 seconds. pour on top of tilapia, add salt and pepper, squeeze some lime juice, and chopped scallions. cover tin foil and bake on 450 for 20ish minutes. delish.

I'm gonna give this a try !
In the morning, I mix a cup of water, a scoop of non-flavored Whey, 1/2 cup of berries, a heaping tbsp of non sweetened, non akalized Cocoa, and a tsp of cinnamon with 1-2 cups of spinach in the blender.
It's not going to be mistaken for a milkshake, but you mostly taste the cocoa and cinnamon. Flavored Whey might be a better way to go, I just dont have any.

I have been on a salad kick and have been using it as a base then adding bit of parm cheese, olives, toms and mushrooms. I put hot chicken on it right out of the microwave (I precook chicken) and then let it wilt the spinach and melt the cheese down a bit. Add some unfiltered EVOO, a bit if dried herbs and dig in!

If you like tomato soup an have a trader joes near by, you can buy a box of the tomato and roasted red pepper soup, add in a TON of torn spinach, a can or two of the canned crab (next to the tuna in trader joes) and heat it on the stove. Top it with a drizzle of white truffle oil and some parm cheese and pepper to taste. The truffle oil really takes it to another level.

I am not a fan of cooked spinach unless it's mixed with something, like all the other suggestions.
At my house, I have substituted fresh baby spinach for anywhere we would normally use lettuce -- in salads, sandwiches, burgers, tacos, etc. It was a great way to get my daughter and wife to start eating it. We pull the stems and chop it up, making it even easier.
When I pack chicken or tuna for work, I throw in chopped fresh baby spinach as well. Easiest way to get into the diet is little bits here and there.

I do a variation on this. I will take a decent amount of olive oil (about 1 cup) and heat it up in a small pan just so it is warm but not hot enough to actually cook anything. Then I throw in some finely minced garlic. I let the garlic sit in the olive oil to impart its flavors for about 10 minutes or so. If you see it sizzling, it is too hot, you just need it warm. I then add 1/2 tsp of herbs de provence. Then off to the side, I have a oil decanter that I filled with about 1/4 cup of lemon juice and 1 tsp of brown mustard (and a tiny bit of salt and pepper to taste). To this, I add the oil slowly. Basically, it is just a very flavorful healthy dressing. This amount lasts me about a week or so and works on so many things (just remember to shake it lightly before pouring to mix it around again when it settles). Salads, chicken, fish, rice, whatever.
Try cooking eggs in it...fantastic!
Oh, and if you don't know what an oil decanter is, it looks sorta like this:
Short term Goal: To cut back before bulking like a demon.

Long term Goal: To get what's mine.
