i think i might be taking too long of a break i lose track of time and sometimes it can be upto 5min between sets and 15min between excersizes.

Not sure if you're serious but how could you possibly take a 15 minute break between exercises? And a 5 minute break between sets is also rather large, I can only imagine doing something even close to this between killer sets of squats or deadlifts. What on earth do you do during that time? Do you spend like 4h in the gym?

If you never fail, you aren't truly pushing yourself to the limit. If you never push yourself to the limit, how do you know what you're truly capable of?

Hell yes that's a long time. If you're training for mass then it's generally about 45-90 seconds between exercises. Maybe 120 seconds for very heavy compounds. For strength it's generally 120-180 (up to 240 for heaviest compounds) between sets (on average). Same goes for between exercises.
So yeah. You're taking way too long breaks. You'll have cooled down before you start your next exercise.How much grass could an ass to grass squater squat if an ass to grass squater could squat grass?

If you scrub yourself for half an hour with strong antibacterial soap, then there might be some adverse consequences but showering every day is fine. In fact most people shower every day and they do this for the majority of their lives. What about people who swim a lot, do you think that because they are wet every day they have some kind of adverse health effects from that? No, of course not!
