I know eating a deficit will reduce testosterone but how about estrogen levels in men?

No, if anything it will decrease along side your test levels causing drier skin, and stiff joints etc most likely neither will happen above 10% bf unless extremes are taken diet wise and fats made too low. Bodies will do what ever they can to keep things in balance aka homeostasis

What I've heard is the more fat you have the more estrogen is produced, so by that logic if you reduce fat it should reduce estrogen levels at the very least by a miniscule amount. Though a very low fat diet definitely reduces testosterone which might skew the test/estrogen ratio. I tried taking in 30g of fat a day for awhile, made my dick stop working, never been more terrified in my life.
