    Any good chicken breast & brown rice recipes?

    Something without any use of oil or fats, but better than plain chicken breast and brown rice with just spices or hot sauce

    Veggies I like with chicken: broccoli, mushrooms, carrots
    Veggies I don't like with chicken: celery, cauliflower

    Perhaps a soup? I dunno.

    Cook the chicken and brown rice. Put a cup of rice on the plate and 6 to 8 oz chicken breast beside it. Taste really good and it's simple. LOL

    season chicken breast with spices (garlic, pepper, cayenne, paprika, salt) and grill. Once cooked combine with 1 cup brown rice and mix in 2TBSP salsa and 1 TBSP Sour Cream and stir everything together. Coat the top with Franks Red Hot, and eat. Very easy way to make it more enjoyable

    I get those frozen lightly sauced with cheese broccoli cuts.

    You warm those up, and mix it in with chopped up chicken. I sometimes throw in some bacon bit flavoring chips.

    Eat the rice mixed with it, or on the side

    I just made this chicken mushroom quinoa dinner that was awesome!!

    Makes 3 servings.

    Ingredients:
    1/2 white onion
    2 cups mushrooms
    1 lb skinless chicken breasts
    1 can Campbell’s Healthy Request Cream of Mushroom soup 96% fat free
    1/2 can fat free evaporated milk
    3 cloves garlic
    sprinkle of salt and pepper
    sprinkle of onion powder
    dash of worchester sauce
    1 cup uncooked quinoa

    First saute the onions in Pam or a spritz of olive oil spray until tender. Add the mushrooms and saute them as well as the garlic. Then add the can of soup and the evap milk. Bring to a simmer. Add the raw chicken and the spices. Cover and let simmer for 30 minutes, stirring every now and again. Meanwhile cook the quinoa as directed. In the last 5 minutes of the simmer, add the cooked quinoa and stir it all around, cover again for last 5 minutes.

    Per Serving (6oz chicken, 1/3 cup quinoa):
    Cals: 468 kcal
    Carbs: 51g
    Fat: 7g
    Protein: 48g
    Sodium: 556g
    Fiber: 5g

    Body building fried rice

    Ingredients
    *********
    COOKED brown rice ( Whatever fits your diet, I use 2 c when bulking, 1/2 c for cutting)
    1 chicken breast (or beef strips or lean pork loin)
    1/2 onion
    1 green onion
    soy sauce and Chinese Oyster sauce (leave out if watching sodium)
    1 clove garlic
    1/2 c frozen corn or peas or broccoli florets
    mushrooms (if wanted)
    1 egg (or egg white)
    1 tblsp EVOO

    1. In a wok or large skilllet over med high to high heat, cook onions & garlic in EVOO until translucent
    2. add in chicken breast, cook til done
    3. add corn or peas and mushrooms and heat thru until corn or peas are thawed
    4. add rice, soy sauce and oyster sauce
    5. while pan is hot add 1 egg (or egg white) and stir FAST (unless you want scrambled egg lol) My mom used the egg to make the rice all stick together
    6. garnish with dice green onion and serve
