    Banana ripeness = level of sugar?

    Hello BB.com!

    Just curious, someone mentioned to me that the darker the spots on the banana indicates a higher level of sugar.

    True? Haven't heard this before... but taste-wise, it makes sense.

    Just wondering, isn't going to really affect my diet - mostly eat bananas for pre and post workout meal/shake.

    Thoughts?

    As far as I know, the banana's starch converts to sugar as it ripens. A green banana is so starchy it's like a damn potato.

    The glycemic index changes but the amount of carbohydrates and calories does not. Starches are still carbohydrates and have the same amount of calories as the simple sugars that it turns to.

    What I want to know is why a plantain has almost twice the amount of calories as a banana

    Yes, the more ripe the banana is the more fructose it contains. This is the same for most fruits.


    Edit: Sorry, no. See post 11. The ratio of fructose to glucose does not change, what changes is ratio of fuctose/total carbohydrate
