1 Packet Instant Oats
1 Extra large Sweet Potato
Later:
8 oz wild smoked salmon + 80 calories of peppers and carrots
Later:
1 Extra Large Sweet Potato + 1 tablespoon walnut butter
Pre-bed:
2 cups 1% cottage cheese
4 tablespoons walnut butter
Should I redirect some of my protein towards carbs?

Less protein, more carbs. Fats seem spot on, but you're up to over 1.5g of protein per lb bodyweight, which is the suggested maximum.
Anorexia dragged me to rock-bottom; watch me build myself back up...

Don't worry about it, once you've got a baseline for fat and protein, all the rest can be carbs.
It's a good idea to have a below maintenance day once a week or so. On these days you can eat mainly protein/fat. I do this once every 4 days and it keeps all fat gain at bay. On other days I eat whatever I want and don't measure it.

Agreed.
You're aiming for 20% of cals from fat. It doesn't need to be this low, and it's forcing you to eat much more carbs than you need.
High carbs are for marathon runners. Moderate carbs & moderate fats are the way to go for bodybuilders.
And what the hell are 'egg beaters' ? Sounds like a euphemism for something________________________________

0.5g fat per pound is generally considered a minimum amount these days. On a bulk, there's no sensible reason to keep fats this low & lots of good reasons not to.
Where's the logic in forcing loads of dry, bulky carbs down your neck when you don't need them, and avoiding a substance that's 9 calories per gram.________________________________

Here is one possible reason. I don't know whether to believe it or not but I do tend to err on the side of carbs when over maintenance.
