When my bread get on the out-dated and "hard" side of things, it simply means that I'm having french toast for breakfast. I don't pay the expiry too much mind when it comes to bread.

Milk/dairy is the only thing that I really worry about when it's just a little past-due. My grandma had no concept of expiration-dating, so she's serve up some of the nastiest milk imaginable. Fortunately, she was easily distracted/trusting and I could usually dump out my glass in the sink before she could notice.

If it does have mold, don't cut the mold off and think it's alright. Throw the whole piece away. Most bread mold has spores that will contaminate other parts of the bread by being carried in the air... or so my microbiology teacher told us. I believe her.

Expiration date is just an estimation, if the bread does not have visible bacterias mold on it I think you can eat it.

your good. Also expiration dates are usually set pretty early so the company don't get in trouble. My rule of thumb is it is good for another week after the expiry date... BUT I always check out the food I'm eating before I put it in my mouth. Just take a look at the bread and if its fine you are good.

Even meat, milk, yogurt, etc. can be consumed after the expiry date. Always go by looks and smell if it's only a few days past expiry.
