Here's the deal,
my new workout split has me working out 6 days a week for a limited amount of time, as follows:
Day 1: Abs (15 minutes)
Day 2: Chest/Triceps (30-40 minutes)
Day 3: Abs (15 minutes)
Day 4: Back/Biceps (30-40 minutes)
Day 5: Abs (15 minutes)
Day 6: Shoulders/Legs (20-30 minutes)
I have to have it this way to maximize my time doing homework and studying. With this, if I continue to eat in excessive amounts (3000 calories or so), would I see fat gain due to the limited amount of time spent in the gym?

3 sets of 8 (working towards 12) dumbbell shoulder press (military press)
3 sets of 8 (working towards 12) dumbbell lateral raise
3 sets 8 (working towards 12) upright rows
3 sets 8 (working towards 12) bent over dumbbell lateral raises
3 sets 8 (working towards 12) shoulder shrugs
3 sets 10 (working towards 12) leg curls
3 sets 8 (working towards 12) leg extension
What do you think about my general question?

18 sets in 20 minutes?? Also that's a ****ing weak leg workout.
You gain from eating considerably more calories then you're expending. So you're not necessarily going to gain fat just because you're not in the gym for that long, no. Apart from that, weight training itself doesn't burn that many calories.
