    the large eggs i use have anywhere from 45-60 grams of egg whites depending. so what is that, about 2 ounces

    screwed that up, was remembering the equivalence of 2 egg whites per egg (on liquid egg white carton) and neglected to divide to make 1 egg white. Simple mistake,

    3 tbsp=1large egg
    1/3 cup=2 large eggs
    3/4 cup=4 large eggs

    Problem solved..!
