I have friends in Thailand who never trained Muay Thai until they were out there, and aged 30+, and they've had stadium fights. Mostly Bangla Stadium, Phuket- but a Muay Thai fight is a Muay Thai fight - espec. in Thailand, even against a local tuk tuk driver.
Ditto for MMA - plenty come out here, join Tiger, Maximum or one of the Malaysia or Singapore or Filipino gyms (etc) and end up getting fights.
Never too late.
And if you wanna compete, I'd say you have until about 35 to make a go of it and train your arse off for months. Of course, you're unlikely to reach the top level the later you leave it, but...http://www.SamuraiLife.net

no, a lot of mma guys don't start until after they finish college. granted most have a base in another area, but you it's definitely not too late. despite how rough it is on the body, mma is a sport that one can stay active and competitive later into life (whether that be from the current mainstream talent pool starting late, need more time to develop skills, etc). also fighter age and actual age are very different. a guy who was been competing and training hard since he was a small child is much more likely to burn out early.
