Got some bone-in skin-on chicken thighs. I left the skin on and deboned them. Saved the bones for stock. Each thigh got filled with half a jalapeno and some garlic/greenonion/cilantro cream cheese. Then they were wrapped up and secured with toothpicks. I smoked them on hickory. Half an hour before they were done, I brushed them with bbq sauce.
The skin was a little rubbery but the thighs were juicy as ****.

Went a little overboard with the sushi tonight... (there were 5 of us though!)
Might not be particularly authentic but it's always nice and fresh which is why I love HK

Celebrating 2nd anniversary with the wife with a decent meal. I didn't feel like drinking wine today, so I cooked and paired with beer instead. Disregard poverty photos. Was pretty buzzed and couldn't hold camera still lol.
Beer drunken mussels paired with Nelson IPA.
Watermelon salad with bacon vinaigrette.
Roasted ancho chili chicken leg quarters with cherry reduction. Paired with Amarillo & Simcoe IPA.

A little dim sum if you ever come to HK, be sure to check out Tim Ho Wan (開飯喇) 1 Michelin Starred, but so affordable!
The owner is the former chef of another dim sum restaurant from the Four Seasons (3 starred) who decided to go solo with his own business
Some har gau (steamed shrimp dumplings, so juicy and plump inside, sticky, thin translucent covering:
Steamed brown sugar cake (I think it originates from Malaysia, not particularly healthy but sooo light):
And their most famous dish... char siu bo lo bao! (sweet and salty BBQ pork inside a crisp bun with a sweet topping! works so well...)

Some more HK classics:
HK style iced milk tea with fishball soup noodles (very nice, light meal, but the drink is very sugary and fattening due to syrup and condensed milk!):
Followed by an HK style egg waffle (cooked on the street from an egg batter, cruncy on the outside, soft in the middle with peanut butter, condensed milk and butter sandwiched in between, certainly not for dieters!):

Wasn't bad at all, scrambled egg was amazing but I do miss the greasy fry ups from UK to be honest ! Difficult to get good sausages here...

Great big salad with some canned salmon on top. Romaine, cilantro, avocado, olives, tomatoes, radish, shallot, celery all dressed with tahini, olive oil, lemon juice, and crushed garlic.

Pierre Hermé macarons, quite pricey but AMAZING taste, flavour and appearance and so much filling! Definitely worth it
Kyoho grapes from Japan! These aren't like your regular grapes, the skins are quite thick but slip off in one piece so easily and the inside of the grapes are in incredibly juicy and have a VERY strong flavour (almost artificial grape tasting )

nope straight oven cooked.
seasoned it with a basic chimicurri sauce(olive oil, pepper n salt, red onion, yellow onion, gralic cloves, white vinegar , lime juice, cilantro and green onion all in a food processor) rub it under the skin all over and over the skin. truss the chicken up and put it in the oven. i put it in at 400.

Charcoal grilled flank steak:
Carved it up. Roasted brussel sprouts/onion/carrot/potato/garlic in salt/pepper/evoo/turmeric and finished it with lemon juice. Added a dollop of leftover Casual5's mother's Spanish casserole:

Finally can cook again. We've been remodeling our kitchen the last 2-3 weeks, but it's basically finished now.
And back to the grind. Roasted chicken breast, mashed sweet potatoes, and cottage cheese.

Pretty happy to say that baked chicken and rice is easy and is going to be a good 'go to' for me from now on;
I threw a can of Coconut Milk in a casserole dish, re-filled the can with chicken stock, then filled the can with rice, mix all that up.
Brown off some chicken thighs, I did mine in coconut oil and madras paste, sit them on top of the rice/liquid mixture.
Throw it in the oven for an hour at 200deg.
Can go anywhere with this recipe really, Chinese, BBQ, Thai, Jerk e.t.c.

Looking at that picture, I see how terrible my plating can be (and often is) but the way I eat, there just isn't much else i can do apart from white plates and plating my meat in a neat little cascade with an artful drizzle of pan sauce on top.
What's with you and steakfish? Do you prefer the texture of meatier fish like swordfish and whatnot?
