I haz Ps3, read the manual and it said nothing about defending them... In 2009, I just buttonmashed... now I get subbed out every single time lulz
I'm assuming the stamina bar is obviously important, but I've tried rotating the joystick clockwise and counter-clockwise to no avail

I have 360 but imagine it's the same.
Button mashing is out this year. Spin the right thumbstick until you get out of it.
Keep an eye on your stamina, if it's really low it it may not matter how fast you spin. Ditto if your fighter's sub D sucks as opposed to the guy subbing you having high sub offense.
If they transition to another submission attempt you have to spin the stick in the OPPOSITE direction or get tapped.
Sometimes I find it hard to spin it the exact way it likes and it's pretty annoying as someone else put in another thread if you hear the stick clicking the sides you're probably doing it wrong. It should be touching the sides of the circle the thumbstick is located in while you're spinning it.

2010 is so much better than 2009, and I liked 2009 a lot. You just have to look up the moves in the action list, and remember them. Different guys have different ground techniques. The major/minor transitions and stick direction are a lot more important in this game than last year. I'm not positive but it also seems like the type of sub you are doing makes a big difference too. If you want to omoplata Brock it's a hell of a lot harder than it is to get him with a triangle.
All you have to do to defend subs is rotate the stick to the right. If they do a transition you rotate it to the left. Speed doesn't matter as long as you are doing full rotations. Watch your stamina and you'll be fine. Also, a lot of people don't actually start working the sub until it's on for a few seconds. This can make a huge difference. You can hold a sub for a bit without doing anything. If you are defending and they aren't cranking at all your stamina will drain while theirs stays full. Then when they start cranking (either by rotating or pressing the stick for a burst) you'll be screwed. I can tap the cpu on expert with somebody like Maia or Big Nog super fast without throwing one strike by doing this.
