say for example you have to help your parents lift a heavy couch all the way to the basement, its obviously really demanding on your back/biceps or whatever, and the next day is your back/bicep day, could this lead to over-training or am i over-thinking

Well if it is over a long period of time and very intense moving, perhaps it could make that part a little weaker, but nothing that a good nap wouldnt fix. I wouldnt concern over it.
