I made some home made beef jerky. It's my first attempt at it, and I left it in too long. It shriveled up and it's very brittle/overcooked. My question is about the nutritional value. If a piece of meat was 1 oz before and had say 5g protein and 2g fat in it, would the same piece of meat have 5g protein and 2g fat after cooking the crap out of it?
