Obviously, I have a lot of weight to lose. One of the few ways that I can get enough protein in me is to make chicken and brown rice bowls. The packets of BR that I use are 360 calories each and I split one into two meals that I have during the day. Is that too many carbs for fat loss? Should I be staying away from brown rice?

Truthfully, the question is meaningless. You can have mcdonalds burger instead of that brown rice and still be okay (speaking strictly from weight loss perspective) if you eat below your maintenance that day. Obviously health wise mcdonalds burger might not be the best choice.
Basically:
- find your maintenance daily calorie intake
- eat 500 calories less than that
- eat enough protein (1g per lbm or per lb of body mass)
- eat some fats
- strength training
- additional but not important factors (if weight loss is your only goal): types of food you eat or cardio.
That's why I say it makes little sense to ask: "Is food A okay for cutting?" It is about your total calories: you can eat few pounds of ice cream in a day and still lose weight if you ate less calories than you need for maintenance. (won't be healthy)
I just checked your stats and saw your weight so I decided to add few more things:
- lay off sodas (and junk snacks) completely if you drink them (diet is better choice)
- COUNT calories
- don't do cardio and then justify a 'snack' after that, because it will either cancel out your whole cardio or even might end you up with calorie surplus

A bag has 68g carbs, only 5g of that are from fiber a 0 sugar. Again, I split one bag into 2 meals, I'm having 34g carbs in each meal.
Also, I have about 30g carbs during my second meal, 40g for breakfast and another 30g during my last meal. So I guess that means a total of about 170g of clean carbs.
Too much?

However .... brown rice will leave you full longer (fiber, slower digestion). Brown rice is one of the best foods for weight loss, probably a staple along with ample amounts of mixed vegetables and chicken breast. Why? Becaues these foods are very low calorie for the amount of fullness they provide. That should never be overlooked in a diet.
One of the things you cant track "on paper" especially when guiding other trainees is random hunger spikes they get.
One thing many successful weight loss stories have in common is plenty of brown rice, chicken and vegetables. Yes you can do McDonalds diet is you stay within your calories alotted, or the new taco bell "drive thru" diet, but if you load up half a plate with steamed veggies, 1/3 a plate with brown rice, and the rest with chicken breast you will be very full which is great for weight loss.
Honestly though, from a nutrition standpoint I have heard bad things about prepackaged rice (from a so called nutrition expert on the radio, claiming almost all nutrition is stripped from microwave rice). I buy large bags of brown rice, cook in bulk. I don't know if this process is any different then what the food companies do. There is so much misinformatino out there. Even still, it only takes a little longer to prepare homemade bowls yourself, you control exact portion sizes (food companies will skimp out on the more expensive chicken and give you more rice per serving then you want, they also skimp out big time on veggie servings).

While I agree with everything you said I also think that a person who ate whatever he wanted for years and then suddenly decided to eat brown rice, chicken and veggies might not last too long on that diet either.
Should grab occasional 'comfort' food to keep sanity and to avoid binges and just work it in the macros.
I personally don't have need for fast food at all, but I can see how people who have been eating junk for years develop affinity to it.
