In general, the difference between doing an exercise standing and seated is that when seated you are less prone to involving momentum or "cheating". For curls, you're more stationary so you can't as easily swing the curl up with your body, so it helps more thoroughly isolate the bicep.
For exercises like overhead presses, it also helps because you do not have to stabilize the weight with your core as much, allowing you to potentially use greater weight and thus overload the target muscle more effectively. (However, a standing press is more of a full-body compound movement which has its own benefits - it just depends on what you're trying to accomplish.)
Lastly, when seated you can also change the angle of an exercise like doing incline DB curls, or using a slight angle backward on the seat for overhead presses, allowing you to target the muscle differently to further specific goals.☠ By reading this post, you have agreed to my negative reputation terms of service.
