Anyone here use coconut oil in your diet?

I have been reading about coconut oil lately, and all the benefits it has to offer in a diet.Just wondering if anyone here uses it in their diet?I am wanting to know how it tastes, and what you eat it with, sounds like it is a really good fat to add to a diet plan.

I use coconut oil when cooking up meats and vegetables. It adds a good rich flavor to the meal. It does not have much of a taste, as much as it adds a slight fatty flavor - similar to butter I suppose.

Taste aside, aren't most tropical oils supposed to be bad for you?

No, coconut oil is extremely healthy.

I use in place of butter for baking - especially desserts since any (good) dessert requires 2 sticks of butter (minimum) :-D. Also works well with popcorn, surprisingly.

As for the taste, look for the processed kind (Refined, Bleached Deodorized (RBD)) which rids the strong coconut flavor. I use both, depending on whether I want the coconut flavor or not.
I can resist everything except temptation.

    1) Agreed

    2) strongly agreed

    3) VIRGIN ALL THE WAY... tastes SOOOo good and coconuty. Depending on amount it can greatly contribute (negatively or positively ) to sauteed vegetables. Chicken is great in it. Despite being unprocessed, virgin coconut oil is stable enough for medium heat (far from the same for unprocessed (EV) olive oil)
