the ontario RAT 3 is the original knife made by ontario and designed by the guys at randals adventure and training. They worked together on a few knives then the RAT guys decided to go a different route and make their own knife company and that is esee knives.
Ontario still makes the RAT knives and they are nice. The knock on them is that their production quality isn't on par with esee which is I think what caused the split. Ontario also doesn't have the same warranty and personalized service as esee. As someone who had an issues with an ontario made knife I can tell you that their customer service is effectively non-existent. You can also get the RAT knives in both 1095 and D2 I think.
Esee makes a knife with a similar or the same design, they have the 3 and the 3-mil. You can get the knife with micarta or g10 handles. You can get the knife in a few different colors. The esee knives come with a vastly superior sheath system. Its a kydex sheath with an attached molle back and you get a boot clip. The ontario sheath is nylon crap iirc. You can attach the esee3 kydex sheath to your belt with the boot clip or you could use molle locks attached to the sheath which a lot of people do.
Other things to note and what sells a lot of people on esee is that they have a no questions asked warranty. You can interact with the owners of esee any time you want and they are pretty straight forward folks from everything that I have seen.
tl:dr
Both good knives. Ontario is cheaper, the esee comes with extras and a way better waranty.

I have heard you can but I haven't done so myself. I'd actually be curious how much the torsion bar is involved with limiting blade play and the locking mechanism of the blade when closed. Probably none on both accounts but I don't know for sure.

flippers are about as good as an assisted opening knife with just a little practive. You have to get used to depressing the thumbstud on the 561 down to get the pressure to open the knife but once you get that down its mechanism slides it open to lock very efficiently. That said, with the exception of places that prohibit assisted knives, i'm not sure why you wouldn't want the assisted open."I'm not like most girls." -most girls

jafomofo, I was just thinking how it would affect the detent of the knife.

carried my Spyderco Manix 2 XL yesterday, I am not digging how hard it is to deploy. Might try that zip tie trick. It is nowhere near as nice as a Benchmade Axis lock IMO. Just too stiff.
