Working out and Hypoglycemia / high metabolism...

Lifting weights 2-3 times a week and cardio the other times is the only regime that seems to work for me and my bodytype. The only problem is that it works WAY too well. My metabolism skyrockets to insane levels. I load up on complex carbs, protein, and to a lesser extent fruit and vegetables. If any part of my HUGE breakfast (2 servings cereal with soy milk (I have sinus problems), 4 egg whites, 2 pieces of toast, and a banana) my blood sugar goes very low throughout the day and I get easily irritated over stupid stuff and I can't think as clear. I feel like there is not enough time in the day for me to get the calories in, and when I eat a good sized meal it's only a matter of time before the emptiness and hypoglycemia kicks in. I am 285 pounds so I can technically eat tons of calories and lose a pound a week but I want to feel comfortable doing it, and feel full for longer then a hour after my last meal. Is there anyone who can give me some pointers or a strategy. Maybe 8-10 complex carbs a day is way too much or way to little, maybe if I eat X item with Y item or something I can feel full and symptom free for a while?
