So I've been lurking here for a while now, and have been doing a lot of googling on different oils and what is best. It seems like coconut oil is the winner. But I'm hoping you all can help me sort out some confusion (true/false) I have about the following statements:
1 - I was told that olive oil is not good for cooking (like, frying eggs) because the high heat damages the oil. So I was told to use canola oil.
2 - I read that canola oil, soy oil, flax seed oil, are not good for you (I read the technical/scientific description of what happens to the oil when you consume it, but there's no way I have a good enough understanding to explain it - basically it's not a good thing)
3 - If it is true that flax seed oil is not good for you, what about flax meal? Is it just the "oil" form that is not healthy?
4 - Virgin coconut oil is one of the best oils and is suitable for high heat (frying eggs)?
5 - Can virgin coconut oil replace all other oils in my house? As in, I can cook with it and also just add it to protein shakes? No need to buy EVOO?
P.S. I love eating fish so I don't buy fish oil.

macadamia oil is #1 for heat- but why do you need high heat oil are you frying foods ? use butter !
freshly ground flax seeds are better than flax meal yes
coconut oil is an MCT and has nothing to do with helping your body get tuned to burn bodyfat but it IS good for you and can be used for a little extra energy pre-WO as well

You won't find a stronger proponent of Coconut Oil than me. I love it. But once place it kind of sucks is protein shakes. At temps below 72 it's a solid, which creates small pointy chunks in your protein shake. For that application, I prefer Olive Oil. Depending on the size of the shake, I can get up to 3 TBS without an adverse affect on taste. But I do all my cooking with it except at breakfast time- I just cook my eggs in bacon fat. Also good for high-heat cooking. Ditto that on macadamia oil, but it's more expensive than coconut oil.
Butter is OK, but not as resistant to high heat as coconut oil- it tends to brown at lower temps. But still good for most applications.
Olive oil is OK for low-temperature simmering/sauteeing. Nothing else. I really only eat it raw.
I've never heard that flaxseed oil is bad for you. It has many health benefits. In addition to dietary use, I have used it at higher doses for it's anti-inflammatory effects, which are notable. I consume loads of it, but of course raw only.
I'm not a fan of canola, but it's probably better than olive oil for cooking.
Bottom line, you can meet just about every oil need with Coconut and Olive Oil. The rest is up to you and your particular preferences.It's time for a Breakthrough.

I did some research on this topic a while back and eventually came accross some info that said that EVOO is fine for cooking at all but very high temps and that most of the talk about it changing during cooking is a myth. I dunno but i cook with it.

Well canuck try this .. 5-6 eggs and 3-4 tbsp of heavy cream .. and seasonings of course ..
peppers , onions - ham , pepperoni if you like in your omelet
BEAT THE EGGS N CREAM THOROUGHLY .. whip um etc ..
cook your omelet ( yes in sweet unsalted butter ) - dont flip it til the last moments ( eggs just looking MOIST on top ..)
then add some cheese on top - cover turn heat off and ooo weee .. THE fluffiest omelet ever
